Christmas Muffins/Bread

Looking for a last minute quick idea to make for the neighbors, mail carrier or the Sunday School teachers? Try this easy Christmas muffin/bread recipe. It starts with a white cake mix and with a little doctoring up, becomes a pretty green and red treat! We have made this for the past 16 years and always receive requests for the recipe. Enjoy!

1 white cake mix

1 box instant pistachio pudding mix

1 16 ounce bottle of maraschino cherries, drained well

2 teaspoons all purpose flour

2 T. or more white sugar

eggs, oil and water as called for on the cake mix box

Make the cake batter according to box directions, adding the dry pudding mix. Toss cherries with flour after draining. Add to mix. Place in muffin tins lined with paper cups or in greased and floured loaf pans. Sprinkle with sugar. Bake according to box directions (350 degrees-muffins 20-25 minutes, bread 45-minutes to an hour, depending on pan size.) Remove and cool. Enjoy!!!
Yield: 24-30 muffins or 2-4 loaves
