Monday, Monday…..(with an updated recipe :-)

Well, this past weekend was full of many treks to the woods, muzzle-loader in hand, camo and safety orange donned and deer blinds up and ready. But alas, no deer for the Ehman males. Mitchell (age 13) did see a few doe and missed a huge one yesterday afternoon. He is used to shooting a rifle or 22 guage and not a muzzle-loader so he thinks that in his excitement, he pulled the trigger to quickly. Will try again today when his school is finished.
Besides that, it is a normal, regular Monday at our house. Making soup from leftover Sunday dinner. (My friend Pam’s hamburger soup. She contributed it for my last book and it is a huge hit with our family. A great way to use up leftovers!) This afternoon will be spent correcting papers and writing a devotion for Proverbs 31 and getting the bills ready to pay.

Hamburger Soup
My friend and assistant Pastor’s wife Pam Sischo contributed this yummy recipe to my last book The Complete Guide to Geting and Staying Organized. It is easy to make and great if you have leftover corn or extra ground beef. Enjoy! And, if you think of it, pray for Pam and her family. Her hubby (and our pastor Ron) is serving in Iraq and scheduled to return home early in December. We are praying for an uneventful last few weeks and safe return! Here is Pam’s recipe:
1 lb. lean ground beef
2 packages onion soup mix
2 beef bouillon cubes
4-6 cups water
4 potatoes, peeled and cubed (we add more)
4 carrots, peeled and diced
1- 15 ounce can corn (or 2 cups leftover corn)
1- 15 ounce can diced tomatoes with juice.
(Optional: you can also add 2 cups more of any veggie. We have used green beans and peas. Whatever we have leftover. Pam NEVER uses peas as her husband has a severe pea phobia!!!!
Brown beef in large soup pot. Add rest of ingredients but corn. Bring to a boil and cook over medium-low heat until veggies are tender. Add corn. Season with salt and pepper (or a little Italian spices like basil and oregano) and serve. My kids like to sprinkle sharp cheddar cheese on top to make it cheeseburger soup too!

I have a similar recipe, that is also delicious– try adding a head of cabbage and replacing the onion soup with a can of tomato juice and 1 cup water. I look forward to giving your version a try! Thanks for sharing.
