Now, here’s our third P31 gal…..LeAnn Rice!

LeAnn Rice currently serves as the Executive Director of Proverbs 31 Ministries in Matthews, North Carolina. She started “She Cooks,” a food blog, a few months ago as an outreach ministry. Her desire for She Cooks is that people will come looking for recipes and menu ideas and find the hope of Jesus Christ woven into the stories she shares of life around her kitchen table.

LeAnn is a single mom to her 17-year-old son, Nick, who, sadly, is not at all interested in taste-testing his mom’s recipes. Nick would be very happy to live on pepperoni pizza and steak swimming in A-1 Sauce. Nick’s limited pallet hasn’t kept LeAnn from her love of cooking. She experiments on family and friends and cooks at her local soup kitchen.

LeAnn’s Favorite Christmas Breakfast Idea

It may sound odd but I always make Resurrection Rolls for our Christmas breakfast. (I make them for Easter, too.) To me, on Christmas we celebrate the gift of Hope. Hope came to us wrapped in swaddling cloth. But He was born to die. Jesus died so that we may truly live. I remember this ultimate gift and ultimate sacrifice by making Resurrection Rolls for Christmas each year. They are easy to make and they provide a great opportunity to share the story of His resurrection with others. Here’s the recipe:

Resurrection Rolls

1 container large crescent roll dough (not the regular size – they won’t work)

½ stick butter, melted

8 large marshmallows

Cinnamon sugar mixture (purchase the mix or combine 1 teaspoon cinnamon for every tablespoon of sugar)

Preheat oven to 350 degrees.

  • Separate the dough triangles. (This represents the cloth that Jesus was wrapped in.)
  • Take a marshmallow. (This represents Jesus.)
  • Dip the marshmallow in melted butter and roll to coat. (This represents the oils of embalming.)
  • Dip the buttered marshmallow in the cinnamon-sugar mixture and coat evenly. (This represents the spices used to anoint His body.)
  • Wrap up the coated marshmallow tightly in the crescent roll to seal the marshmallow inside. (This represents the wrapping of Jesus’ body after death.)
  • Place on a cookie sheet and place in the preheated oven for the length of time indicated on the crescent roll package. (The oven represents the tomb.)
  • When the rolls have cooked and cooled slightly, bite into the rolls and discover that Jesus is no longer there, HE IS RISEN! (The marshmallow melts and the crescent roll is puffed up, but empty!)

These rolls are not only a delicious Christmas breakfast, they are another opportunity to give praise and thanks for the ultimate Christmas present. I serve them with some fresh fruit and hot chocolate.

      Oh dear, I LOVE Johnny Mathis too!!! It brings back such wonderful memories of growing up. My parents had the Christmas albums of all the great singers-Andy Williams, Nat King Cole, Ella Fitzgerald, Bing Crosby, the list goes on and on. I now listen to them on Pandora with a big smile on my face while I work.

      Well being honest here, my family growing up and now with a family of my own, we never had a specific christmas breakfast food. Maybe this year is the time to implement one from She Cooks because her blog is GREAT.

      Ooo- Resurrection Rolls! Very cool! My husband’s family has always done something a little like this – except without the marshmellows or the very cool symbolism! What his mom has always done is taken butter and brown sugar with a little water (I have learned this is quite important) into a pan, dropped canned biscuits on top of that (I used the honey butter ones on Thanksgiving), and then topped with more brown sugar and butter. Baked at the temperature the canned biscuits call for! My husband loves them, they are very rich so I can only eat one or so!
      My family has always done bubble bread ( or also known a monkey bread) with little sausages and scrambled eggs! ;)

      We have a large Christmas eve gathering. So instead of having the typical large Christmas meal we have Christmas Breakfast instead. The great thing about our meal is that most of it I can make earlier in the week. All I have to do Christmas morning is pull it out of the fridge and put it in the oven. Nice & easy! A couple of the things we like to have are Baked Cheese Grits & Hash Brown Breakfast Casserole. Yummy!

      I love the name Resurrection Rolls! My mom used to make them for us when I was a kid. They won a Pillsbury bake-off one year. My favorite Christmas morning breakfast is Swedish Pancakes and Sausage. We celebrate on Christmas Eve with a smorgasbord and this just tops it off!

      I don’t remember a “traditional” Christmas breakfast from my childhood and honestly hadn’t thought much about one with my own children. Mostly its cereal or sausage balls and cinnamon rolls. I will be trying the Ressurection Rolls. Thanks for sharing.

      At my house the family favorite is cinnamon rolls. We have had an ongoing debate about the type…I would prefer homemade-something gooey along the lines of cinnabon. My family prefers pillsbury in a can cinnamon rolls. I have yet to win the debate…fortunately what they want is the easier of the two to make and I since I am not a fan of them really am not enticed to indulge!! Love the Resurrection Rolls recipe!!

    • We have Christmas morning breakfast at our house and we always have Sausage breakfast casserole, hashbrown casserole, cream cheese danish, bacon, and fresh milled yellow grits…..LOVE IT!!!

      I stated this yesterday from my Christmas memories, mom always made homemade cinnamon rolls for Christmas morning with homemade hot chocolate or OJ. I do not know mom’s recipe because she always adds stuff until it is just right(lol). I loved those rolls and hot chocolate. I try to do that but I buy the pillsbury cinnamon rolls but I do make hot chocolate!!!! What memories!!!!

      Thank you for the wonderful Resurrection Rolls recipe. It’s definitely something I will add to my Christmas breakfast menu. We started the tradition years ago of having our parents join us for Christmas breakfast to see what treasures our children had received. Sadly my husband’s parents have passed away but my parents continue to come to our house for Christmas breakfast even though our children are now 24 an 30 and out of the house. It is a treasure to gather around the table and enjoy food and feloowship as family.

      It has been tradition in our family for years to have homemade cinnamon rolls for Christmas breakfast. I have to get up early to set them out so they will raise but the kids loved waking up to the smell of them baking. Now that it’s just the two of us, I still make the cinnamon rolls and we eat them together Christmas morning looking at the lights of the tree and remember those special mornings of the past. Our oldest daughter has carried on the Christmas morning tradition except she makes Monkey bread…….a fitting meal for her 4 monkies…….LOL.       I love having leisurely breakfasts with my family during the Christmas season. The kids are off school and my husband is on vacation, I will make something different each day, but really enjoy just being able to sit down at the table together and enjoy starting the day with each other.       I can’t wait to make the Resurrection Rolls with my daughters, ages 13 & 5. Sounds like fun! At my house we love raisin bran muffins – hot out of the oven.

      RAISIN BRAN MUFFINS
      •1/4 cup vegetable oil, plus more for tin
      •1 1/2 cups raisin bran cereal
      •3/4 cup milk
      •1/2 cup whole-wheat flour (spooned and leveled)
      •1/2 cup all-purpose flour (spooned and leveled)
      •2 teaspoons baking powder
      •1/2 teaspoon ground cinnamon
      •1/4 teaspoon salt
      •1 large egg, lightly beaten
      •1/4 cup packed dark-brown sugar
      1.Preheat oven to 400. Lightly oil a 6-cup standard muffin tin, or use paper liners. In a medium bowl, combine cereal and milk; let stand until softened, about 5 minutes. In a small bowl, whisk together flours, baking powder, cinnamon, and salt.
      2.Stir oil, egg, and sugar into cereal mixture. Fold in flour mixture. Divide batter among cups (see left). Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Cool in tin 5 minutes, then turn out onto a wire rack; let cool completely, or serve warm. Store up to 5 days at room temperature in a re-sealable plastic bag.

      We have donuts for breakfast on Christmas morning. We have done this every since we’ve had kids, (13 years)it is so easy to stop by the donut shop on Christmas Eve and pick them up and then be able to enjoy our family time on Christmas morning without having to be in the kitchen cooking.

      Definitely going to try the Resurrection Rolls recipe out!! I really like a good sausage and egg casserole for breakfast on a cold Christmas morning—

      SAUSAGE, EGG AND CHEESE CASSEROLE

      6 slices bread, crust off
      1 lb. bulk sausage
      2 c. grated cheddar
      6 eggs
      2 c. milk
      1 tsp. salt (or to taste)

      Cook sausage and drain. Set aside. Break bread into small pieces. Place in bottom of pan or casserole dish. Put sausage over top of bread. Sprinkle grated cheddar on top of sausage. Mix eggs, milk and salt. Pour over sausage mixture. Let stand in refrigerator overnight. Take out 1 hour before you are ready to bake. Bake 45 minutes at 350 degrees.

      I LOVE to have cinnamon rolls on christmas morning. It’s a tradition for my husbands family and always takes me back to the sunday mornings after my parents divorced, every sunday before church my dad would make them and use the scent to wake my sister and i up.

      We are such sweet-o-holics (is that a word) in our family. We love Grandy’s Huge Hot Cinnamon Rolls on Christmas morning. Don’t know if you can get them outside of Dallas, Texas, ya’ll. But, they are so yummie. And, oh my. Johnny Mathis. I’m telling my age. Forget my mother growing up with him. He is awesome in my growing up years!       Favorite holiday food….
      Every year for Christmas growing up there was a cheeseball that was so yummy.. and for the last several years I made for family christmas and still make it…
      Here is the recipe for my family Pineapple Cheeseball…

      1 8 oz pkg cream cheese
      1 8 oz can pf crushed pineapple
      Onion…. I only chop up maybe a tsp…
      Green Pepper.. approx 1 tsp chopped
      ** on these 2 ingredients put as much or as little as you want….
      Crushed nuts to cover cheese ball.. but this is optional..

      Take fork and make cr cheese flat…
      Drain pineapple ( I drain it and then squeeze it to get all juice so its pretty dry)
      Put it on the cream cheese along with green pepper and onion.
      Form into cheese ball…
      Roll it into crushed nuts or sometimes I save little pineapple and use that on outside too.
      Serve with crackers and ENJOY:)

      Hello! We’ve never made “resurrection rolls” but something similar. My daughter and I actually have a favorite (healthier) version of carmel rolls called “Monkey Bread”. This is from Hungry Girl and there are about 154 calories in each one- so you could have a couple without totally blowing your calories for the day.

      1 pkg Pillsbury Crescent Recipe Creations Seamless Dough Sheet (sometimes difficult to find so I use the reduced fat Crescent Rolls and just press the seams together)

      1/2 tsp baking powder

      2 T brown sugar (not packed)

      2 T sugar-free pancake syrup

      2 T light butter (I like Brummel and Brown)

      2 tsp cinnamon, divided

      3 T Splenda-granulated, divided (I don’t use that so I just sprinkle in a little reg. sugar)

      Preheat oven to 350; Spray 6 cups of a muffin pan

      1. mix 1T splenda (I use reg. sugar-but I don’t measure it, I just sprinkle a little in) and 1 tsp cinnamon in bowl. Set aside

      2. roll out the crescent roll on clean, dry surface and sprinkle evenly w/ baking powder. Smooth that onto the crescent rolls w/ fingers.

      3. cut dought WIDTHWISE into 6 strips in equal size. Cut ea. strip into 4 squares. Roll ea. square into a ball-totalling 24 dough balls.

      4. place 12 balls in bowl w/ splenda/cinnamon mixture. Lightly toss to coat and put in muffin pan-4 balls in ea. of 3 cups. Don’t press them into pan-just let them lay. Repeat w/ remaining dough balls. Set aside.

      5. place small pot on stove-add butter, syrup, brown sugar, 2 T Splenda (I skip adding sugar to the pot) and 1 tsp cinnamon (I do add the cinnamon tho). Turn on stove to medium heat. Stir frequently just til butter melts and contents are mixed well. Evenly spoon mixture over dough balls in muffin tin.

      6. Bake in oven for 15-20 min, or till puffy and firm. Yum! :)

      We never had a traditional Christmas breakfast until a few years ago. I stumbled on this recipe for puffy pancakes and we’ve enjoyed them ever since. It’s quite simple and can be topped in many ways, my favorite is with lemon and powdered sugar, like a German pancake. My children love it topped with fresh fruit, my parents with good old-fashioned maple syrup. Sausage or other tasty treats on the side to round out your meal…

      2 tbsp butter
      2 eggs
      1/2 cup flour
      1/2 cup milk

      place 2 tbsp butter in 9 in glass pie plate, place in oven and heat to 425. Meanwhile whisk eggs, add flour and milk and whisk just till moistened. DO NOT OVERBEAT! Pour into melted butter in pie dish and bake approx 25 minutes or until golden brown. (I swirl the butter in the pie plate to coat the sides.) Pancake will rise and puff up, often forming a bowl. Serve hot.

      We are usually away at Christmas so we really don’t have a breakfast tradition but the resurrection rolls might be a possibly this year.
      LeAnn, I have followed your blog from Day 1 and I print and forward to my family and friends and just yesterday I realized I needed a folder to collect them together!
      A special Dutch treat for breakfast are poffertjes (mini-puffed pancakes) prepared in a poffertje pan served with melted butter and sprinkled with powdered sugar. My children enjoyed them at our Tulip Time Festival when they were young. When my three children leave home they will take their pans with them for their homes.

      With teenage boys and nights so busy, we now have a weeklong tradition before Christmas of watching our favorite Christmas movies in the morning eating a differnt yummy breakfast. One of our favorites is Green Chile Frittata from Allrecipes.com It makes enough that you can heat up some leftovers Christmas morning for breakfast. Tastes great with salsa and sour cream!!

      Ingredients

      10 eggs, beaten
      1/2 cup all-purpose flour
      1 teaspoon baking powder
      1 pinch salt
      1 (7 ounce) can diced green chile peppers, drained
      1 (16 ounce) container low-fat cottage cheese
      1 cup shredded Cheddar cheese
      1/4 cup melted butter
      Directions

      Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9×13 inch baking dish.
      In a large bowl, mix the eggs, flour, baking powder, and salt. Stir in the green chile peppers, cottage cheese, Cheddar cheese, and melted butter. Pour into the prepared baking dish.
      Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking for 35 to 40 minutes. Cool slightly, and cut into small squares.

      Sometime over the Christmas Holiday when the house if full of people we have biscuits and gravy. My brother-in-law thinks the gravy is the best and we have fun making it together!

      Southern Living’s Breakfast Enchiladas has been our fave for many years now! We make it the night before and just have to heat it up in the morning, even the little ones love them. Johnny Mathis is fabulous as well, will be a plus to get these tunes!! Merry Christmas!

      Our family loves Baked Blueberry Stuffed French Toast on Christmas Morning. I usually get this ready to go on Christmas Eve. Then when we get up in the morning, the oven gets preheated, the coffee pot get started and then into the oven it goes…while it is baking we read thru the Christmas story from Luke, thanking God for sending His Son, Jesus and giving us the gift of hope. After this we enjoy this yummy breakfast before we open gifts.

      Some of my favorites are stuffed french toast, baked oatmeal, and baked apples, but only small helpings because there must be room for lunch!

      Christmas morning breakfast is usually fruit and candy from the stocking. Not really a tradition, but it does seen to happen every year.

      My favorite holiday breakfast is orange danish rolls with the family. It was a tradition at my husband’s home that we have carried into our home on Christmas morning.

      Hello all! 1st I want to say that I absolutely love the idea of, spirit behind and within, and the yummyness of the Resurection Rolls for Christmas morning! I will prepare these with my daughters this year so we can together reflect on our Savior Jesus!

      A favorite Christmas breakfast of mine has been when my husband makes us all “Egg and Cheese sandwiches”. They are very simple but it’s a fun (because Daddy makes them), tastey, and portable while opening presents, breakfast!

      Christmas at our house is seeping with tradition. But one tradition in particular that our whole family enjoys is our Christmas morning breakfast of sausage balls and the yummiest homemade hot chocolate you’ll ever drink – I’m partial but it really is the best! And because I want all you gals to have the best, I’m going to share my mama’s famous recipe (famous in our family anyway).

      Homemade Hot Chocolate
      1/4 cup of cocoa
      2 1/2 cups of sugar
      1 gallon of milk
      1 tsp. vanilla flavoring

      Mix cocoa and sugar together in a large bowl. Add a little water and bring to a boil (bubbles will begin to rise). As bubbles rise to 1/2 of bowl, pour in gallon of milk and vanilla flavoring. Simmer until heated through. Serve hot with marshmallows. (Great as leftover chocolate milk!)

      It is lip-smacking-mustache-making GOOD! Enjoy!
