On Cyber Connections & Simmering Soups
I love my cyber friends.
That includes you, ya know!
Although nothing can ever compare to my up-close, in-person girlfriends with whom I “do life”, including all sorts of burden-bearing and joy-sharing, I treasure the friendships I’ve made here on line.
Seriously.
It touches my heart EACH TIME I see a familiar name in the comment box, or on my Facebook page.
And it touches me to see new names as well.

Now, speaking of cyber friends and all things Facbook-y.
I left a status update on New Years Day that included the fact that I was making Ham & Corn Chowder. I was instantly asked for the recipe by oodles of people.
Although I didn’t have time to type it in and send it to my sweet friends then, I promised to post it here.
So here is my simple tip and menu idea for you:
This Sunday for your family supper, serve ham and corn as the main part of your meal.
Then on Sunday evening (or Monday if you are at home) make this fabulous soup with the leftover ham & corn.
I always get requests for this recipe each time I serve it. So much so that I made it a point to include it in my hospitality book A Life That Says Welcome.
Here it is for you to enjoy.

Ham-Corn Chowder
In a large pot combine:
4 cups chicken stock (or 4 cups water with bouillon cubes to taste)
4 cups chopped, peeled Yukon Gold potatoes
1 chopped onion
1/2 cup chopped celery
Cook, covered, over medium heat for 30 minutes or until potatoes are tender. Then add:
3 tablespoons butter
2 cups finely chopped leftover ham
1 1/2 cups leftover corn
2 cans cream of chicken soup
1 1/2 cups sharp cheddar cheese
Just before serving, add:
8 ounces sour cream.
Thin with a little milk if needed. Stir well. Serves 8–10.

As you mentioned, cyber friends can be a real treat. I don’t get to town very often – the nearest town of any size being 30-45 minutes away. Since retiring it has been fun to meet and “converse” with friends on-line. Also, I have met people who have a variety of interests that I might not have met in conventional ways. I enjoy following you on twitter and as a prayer sister.
We had a Church Council meeting this past Sunday, everyone was told to bring their own sandwich. Since the temperatures were in the 30-50s, I made a double batch of Corn, Sausage Chowder that was a huge hit. Matter of fact, your post reminds me I need to type it up and take it to some people at Church that requested a copy.

Oh my that soup sounds so yummy! We had been in the deep freeze here in the beautiful Pacific Northwest for the last few weeks. Yesterday though it warmed up to almost 50°!!! Soup still sounds wonderful though. thanks for the recipe!
Sounds yummy! I love soup but am trying to eat vegetarian so I probably won’t partake…sure would be good in this COLD we are having, though. Have a great weekend!
