On Reminiscing & Rhubarb
For those of you who have a dad still living, I hope you were able to love on him either in person or from afar yesterday.
Todd’s father has been with Jesus for six years now. My dad is still alive and kicking and as ornery as ever. He lived through two open-heart surgeries 6 weeks apart which resulted in 8 by-passes on his heart (a triple & a quintuple).
The doc’s said he would probably live another 2 or so years at the time of the last surgery.
That was 14 years ago!!!! By God’s grace he’s still not only alive, but still maintains his big yard, golfs several times a week, often winning tournaments for his age bracket, and works part-time at a golf course. And in a few weeks…he turns 80!!!!!
Recently, he gave me this snapshot of us that he’d had in a book since the early 1970′s.
I remember it well. It was taken in the photo booth of the Kmart store on West Saginaw in my hometown of Lansing, MI. Afterwards, he let me get a cherry Icee at the “buffeteria”.
I only saw him twice a month at best so I remember times with him very vividly.
After we visited with him at his place yesterday, my step-mom and I picked some rhubarb in their garden.
Now, I know most folks aren’t neutral about rhubarb. they either love or hate it. For you lovers, here is the crisp we made from it last night. Been using this recipe for 24 years.
Rhubarb Crunch
1 C. flour
3/4 C. rolled oats
1 C. brown sugar, packed
1 t. cinnamon
1 stick butter, melted (1/2 C)
4 C. diced rhubarb
1 C. white sugar
2 T. cornstarch
1 C. water
1 tsp. vanilla
Preheat oven to 350 degrees. Mix first 5 ingredients and press 1/2 into a 9 x9 inch pan that has been sprayed with cooking spray. top with rhubarb.
Combine rest of ingredients (but vanilla) in a saucepan and cook over medium to medium-high heat, stirring constantly until slightly thickened. Remove from heat. Add vanilla. Pour over rhubarb.
Top with remaining crumb mixture and bake for 50 minutes to an hour until lightly browned. Serve with vanilla ice cream.

Oh, how I would love some fresh garden rhubarb….we are from Michigan and have not had good rhubarb since we moved to TX 30 years ago. Your recipe makes my mouth water. The rhubarb purchased at the grocery store has not been good at all.

Wow , Karen I am impressed that you have good rhubarb. I was commissioned to make a strawberry rhubarb pie for Fathers day ( a huge family favorite). I went to 3 fruit markets, they all told me how bad the rhubarb is this year from all of the early and heavy rain and they were waiting for fresh product on Monday (a little late for fathers day).

My dad is in a nursing home near me. He has never been a loving or caring father and I hated him most of my life. Through Chist and His love for me, I have learned to love my dad. My sister and brother want nothing to do with him and I do understand that but……he now has alzhiemers (sp). We are on a different level than we used to be, he needs me and God has given me an opportunity to love my dad…to really love him as a daughter should love her father. Without my Father I would not be able to love my father.
I might try the rhubarb, never had it!!
Father’s Day was difficult for me the last two years since my Daddy’s death in 2008.
I was always my Daddy’s girl; until I gave my life to Christ and was married to someone that he did not choose nor approve of. When he disowned me, I was devastated; and there aren’t even words to describe how I felt when he died unexpectedly in an accident before the opportunity to reconcile came.
God has healed me in a mighty way through His unconditional Fatherly love to where this year instead of struggling on Father’s Day I was able to look back on the wonderful memories and honor my Daddy for loving me with all he had.
I was reminising with a lady at the farmers market last week about strawberry rhubarb pie. She sweetly asked if I thought I could make her one this week and I agreed to try. Others heard our conversation and now I have orders for 4 strawberry rhubarb pies! Hope I meet their expectations! Had a practice run yesterday – what a delightful breakfast this am.
MY husband grew rhubarb in our first home and I got to the point where I can make rhubarb crisp with my eyes closed. I miss having a “ready dessert” in my garden but some ladies from my weight-loss group give me their abundance. We often cook it down with sugar and use on waffles! My father-in-law gave me a rhubarb delight recipe, he loves rhubarb too. I didn’t grow up with it so when we made crisp for my dad when he visited us in our first home, he jokingly referred to it as “garden hose.,” I guess since it came from the garden and was forgeign to him. He still cracks himself up calling it that. Thanks for the memory!
Thanks 4 for shareing your anniversary an recipe.my dad wnt to jesus 5 yrs ago an fathers days are better than they usedto be bcz iv learned to thank the heavenly father for blessing me wth a sweet earthly daddy.there were 6 girls an 1 boy an dad spnt sat mornings watchn cartoons wth all of us on his lap an on the floor between his feet.us girls all hd long hair an dad would make mom laugh whn he would make himself a mustache with our hair.him an mom hd their 61st anniversary the 14th of july an he wnt to jesus the 28th of july.my moms in assisted living an hz bn playn guitar since she wz 19.she told me she didnt belong in there with all those old people.shes 84. lol.shes on dialisis 3x a wk,hz diabetes an survived colen cancer an 4 bouts of congestive heart failure.i thank god we still hv her.i pray ovr her every day an thank god according to psm 91 for satisfing her wth long healthy life.my step grnma grew rhubarb in walton ks an made pudding.nvr herd of thro n flesh balls, lol,bt hrd of fleshn out:)
