With St. Patrick’s Day right around the corner and with a little bit of Irish blood coursing through all of the Ehman veins here at our house, I thought I’d give you a winter warm-up recipe that is a hit at this time of year– Cabbage Roll Casserole. All of the flavor and none of the work of regular cabbage rolls. And it is Weight Watcher friendly!!!! Enjoy!!!
Cabbage Roll Casserole
1 lb. ground sirloin
1 onion, chopped
2 tsp. olive oil
1 tsp. salt
1/2 tsp. pepper
1 cup minute rice
2- 16 ounce cans diced tomatoes with juice
1 1/2 c. tomato or V-8 juice
3 c. shredded cabbage
In a large frying pan, brown the sirloin and the onions in the olive oil. Add rest of ingredients except for the cabbage. Place cabbage in a 9 x 13 inch pan that has been sprayed with cooking oil. Pour meat mixture over the top. Do not stir!!! Bake, covered, at 325 degrees for 1 hour and 15 minutes. Uncover and continue cooking for 15 more minutes. If casserole appears to be getting dry, add a little more tomato juice. Serve with fresh grated Parmesan cheese on top!!! Add whole grain bread and a dessert and its dinner!
