Old Cookbooks & Pumpkin Bread

I love old cookbooks. I found this one at our little town’s used library book sale.

Old cookbooks have some great recipes, especially for baked goods. Here is what my neighbors are getting from me this week: the ABSOLUTE best pumpkin bread EVER!

Pumpkin Bread circa 1966

Blend:

3 1/2 C pumpkin

3 1/2 C sugar

1 C oil

2 eggs

Mix well and add:

4 C all-purpose flour

1 1/2 t. cinnamon

1 1/2 t. salt

1 t. cloves

1/2 t. nutmeg

4 t. baking soda

Bake at 350 degrees for one hour in two large greased loaf pans. Cool 15 minutes. Flip out of pans and frost with:

2 C powdered sugar

1/2 t. vanilla

Thin with half and half or whole milk until it is thick but pourable. Drizzle over cake.

  1. I made this yummy bread last night for a bible study this morning. It is very very good, but don’t use a standard loaf pan to bake it in as it won’t get done in the middle (like I did). For my second bathc I ended up using a 12×6 pan and it came out perfectly. Very yummy!

  2. We love pumpkin rolls at our house. We get them every holiday either from family or I have to buy one from Krogers as I don’t know how to make them but everyone in the family loves them.

  4. Love anything pumpkin! Want to try this, but the only thing holding me back is a nutritional “table”. I need to know about calories & fat content especially. I live by checking labels, as I’ve lost 40 lbs, and don’t want to go back. Maybe, with this type of rescipe, I shouldn’t even be asking this….

  6. Just compared to my grandmother’s recipe. This one has less flour so ends up with more pumpkin. Definitely looks worth trying!

  7. This looks delicious! Any idea what they mean by large loaf pans, though? I’ve got loaf pans, but I don’t know that they’d qualify!

  8. Hi Karen , Marvelous recipe!!! Have you ever gotten old cookbooks wrap a vintage tea towel around it & stick wooden spoons out where you tie the knot in the middle? Allso google pumpkin bread with coconut instant pudding mix It is so moist & very good ! :) one recipe calls for 1 box of instant coconut pudding mix good size recipe for one loaf but the other calls for 2 boxes You will be impressed with the taste Even those who don’t like coconut won’t not like this recipe!   10. I love, love, love pumpkin bread when it’s good…when it’s not, well it’s not. So since you recommend this one so highly I will try it.

    I have my grandmother’s Betty Crocker cookbook from circa 1940-50. She was a test cook for high altitude and it has all of her notes. I cherish it and when I received it I lived at sea level…who would have thought that so many years later I could use it in Salt Lake.
