Let’s talk Veggies

Chopped Vegetable Salad

To make this snappy salad, chop the veggies into small pieces, including the lettuce.

Mix the vegetables with your familyโ€™s favorite dressing and serve!

Here are some suggestions to make it colorful and crunchy.

 

 

1ย  head romaine lettuce

2ย  stalks celery

2ย  carrots

1ย  red bell pepper

1ย  cucumber

1ย  summer squash

ยผ c.ย ย ย ย ย ย ย ย ย  sweet or red onion

ยฝ c.ย ย ย ย ย ย ย ย ย  broccoli or cauliflower flowerets

ยฝ c.ย ย ย ย ย ย ย ย ย  chopped tomato

 

This next savory salad is sure to hit a home run with the family and taste buds. Another taste-tested favorites of ours.

Layered Cornbread Salad

romaine lettuce, chopped

1 (15 oz.) canย ย ย ย ย  kidney beans, drained

1 c.ย ย ย ย ย ย ย ย ย  tomatoes, chopped

ยฝ c.ย ย ย ย ย ย ย ย ย  sweet or red onion, diced

1 c.ย ย ย ย ย ย ย ย ย  corn, fresh or frozen and thawed

ยฝ c.ย ย ย ย ย ย ย ย ย  red or green bell pepper, diced

1 cup ย ย ย ย ย ย  peppercorn or cucumber ranch dressing

ยฝ cupย ย ย ย ย ย  shredded cheese

Bake cornbread using your favorite mix or recipe. Allow to cool. Using a trifle dish, layer ingredients in order with cornbread on the bottom. Top with salad dressing and cheese. Serves 6โ€“8.

  1. My favorite salad: 1 bag broccoli slaw, 1 small can water chestnuts (chopped), 2 chicken breasts )cooked and shredded), 8 oz mandarin oranges (drained), a bunch of chives (chopped), and 3/4 cup of Sesame Ginger salad dressing. Combine well and refrigerate until serving. This is scrumptious!

  2. My favorite summer salad is Mexican bean salad. It is Yummy and easy to make with no cooking required :)

  3. My favorite salad would have to be just fresh fruit: strawberries, blueberries, grapes, mandarin oranges, pineapple, bananas and apples (both dipped in the pineapple juice so they don’t turn brown too quick). YUM!! :-)

  4. Love these salad ideas, Karen. My fave is ‘triple berry salad’ I found on Pinterest: Baby spinach with blueberries, strawberries, raspberries, avocado, basil, sliced almonds, crumbled goat cheese, strawberry balsamic dressing. YUM!

  5. My favorite summer salad is a fried chicken salad. It’s mostly regular lettuce salad ingredients with fried chicken pieces on top and a ranch dressing! Yum!

  7. My favorite summer salad is a strawberry spinach salad with fresh cucumbers almonds and a poppy seed vinaigrette.

  8. My favorite summer salad is simple. Mixed greens & some shaved carrots and I’m good to go. Ranch is my favorite dressing but I’m willing to try the different kinds out there.

  9. My favorite summer salad, now that tomatoes are in season, is:

    Chop several tomatoes into bite size pieces. Add 1/2 red onion (or more!), chopped. Pour Italian dressing over. This salad becomes better after a day or two, when the tomatoes and onions have a chance to marinate. The tomatoes and onions are also wonderful on hamburgers, fresh off the grill!
