Banana Cake w/ Peanut Butter~Cream Cheese Frosting

 

Banana cake with peanut butter frosting! At karenehman.comSo, when I was a little girl, I remember my mom always baked a cake for us on the first day of school. I have carried this tradition over into our family too. So, since 1996 on Kenna’s first day of homeschool kindergarten and every year since { just one son left in school–a junior at the local high school} I grab the big batter bowl and my hand mixer and whip up a cake from scratch.

This year’s offering? Banana cake with peanut butter~cream cheese frosting.

I posted a pic on Facebook and Instagram last week on the first day of school and had several people ask for the recipe so, here it is. You’re welcome.

Yes, it is fattening, but it is delicious. {Watching what you eat? Try a trick I learned so as not to pig out on this cake or other goodies. Wait until there is just one piece left {or one brownie or cookie} and then have it. If you are craving more–too bad! It’s gone!}

Banana Cake with Peanut Butter~Cream Cheese Frosting

  • 3/4 cups real butter, softened
  • 2  cups sugar
  • 3 large eggs
  • 2 teaspoons real vanilla
  • 1 1/2 cups buttermilk
  • 1 1/2 cups, really ripe bananas, mashed (about 2-3)
  • 1 teaspoon lemon juice
  • 3 cups unbleached flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
Frosting
  • 1/4 cup real butter softened
  • ½ cup creamy peanut butter
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon real vanilla
  • 3 1/2 cups or more powdered sugar

Be careful not to over-mix. It will make the cake tough.

In a large bowl, combine sugar and butter and cream until fluffy. Mix in eggs, one at a time, and vanilla. Stir in buttermilk, bananas, and lemon juice. In a medium bowl, combine remaining dry ingredients, stirring well. Add dry ingredients to wet ingredients and beat at low speed just until well blended. Bake in two round cake pans that have been greased and floured (or sprayed with Pam for baking. This is not just cooking spray, but cooking spray with flour in it.)

Cool on wire racks or wax paper.

Bake at 350 degrees for 22-28 minutes or until a toothpick comes out clean. DO NOT OVER-BAKE.  Cool 15 minutes and remove from pans. Frost with frosting.

Mix the frosting until smooth and fluffy.

FOR FROSTING: Combine all in a large bowl and beat over low speed until well blended. Add more powdered sugar to get the right consistency.

Ta-da!!! This one won’t last long.

NOTE: This can also be made in a 9 X 13 inch pan. Bake at 275 degrees (yes–275!) for one hour. For cupcakes, bake at 275 degrees for 35 minutes.

  1. I am not much of a cake person… I have always liked tart things like Key Lime Pie or Young at Heart Lime Dessert (which combines chocolate with lime) It’s delicious!   3. My favorite from scratch cake is a white cake with like a soft white light frosting and cherries on top. This is a favorite with my whole family. Its tradition for everyone’s birthday every year. It’s just not the same without it. It is a light refreshing cake. Yumm!!!

  4. I love to bake!! And most often it’s from scratch, unless I’m in a hurry:). My favorite from scratch cake is chocolate cake with peanut butter icing! The cake is moist and the icing fluffy! I’m not even a fan of peanut buyer, but I love this family favorite! My mom always makes extra icing so it’s as thick as the cake! Indulgent, but delicious :). Your cake sounds divine. It’s going on my ‘cake list’.

  5. My favorite made-from-scratch cake is a double layer chocolate cake with creamy chocolate icing. Add a nice glass of cold milk or French vanilla coffee and I’ll be your friend for life.

    1. Lol, my favorite is carrot cake!! A friend from church’s mom makes one that is my favorite!! She blesses our family with one at least once a year, especially during difficult trials. Love from her heart and her kitchen. She doesn’t have to say a word, the cake speaks volumes from her heart.

  9. I have never made a cake from scratch myself. I make cookies from scratch and pies from scratch, but never a cake, probably because I don’t like most cakes. But my sister-in-law makes the most amazing cakes and they look like they belong in a bakery after she decorates them (taste like it too). She made a vanilla cake but added purreed strawberries to it for strawberry cake for my son (it was his second birthday, it was also cut and decorated to look just like a tool box). It was divine and I don’t like strawberry cake. And then when my husband and I got married 5 years ago, we had a red velvet cake with chocolate mousse frosting by this wonderful bakery and it was fabulous. I loved it. Yummy!

  10. My favorite is a Carrot Cake recipe that I received from a friend. It was her Grandmas ‘secret’ recipe that she wouldn’t give out. My friend Wanted this carrot cake as the Grooms cake at her wedding. So she snuck in her grandma’s basement into her recipe box and copied the recipe. At the wedding her grandma commented that this cake tasted just like hers, the best compliment I have ever received. She told her grandma it was in fact her recipe. She told grandma the story and Grandma smiled and was honored that she liked it that much that she wanted it to be part of her special day.

  11. My favorite made from scratch cake is red velvet with cream cheese frosting. It just brings me back to when I was little and my Grandma would have us, my sister and me, mix everything with a whisk. Then when she was gone my mother would make it on her birthday every year. IT never tasted right using a mixer- you must take your time and whisk the ingredients( and memories).

  13. Our favorite cake is Walt’s Chocolate Cake with either cream cheese frosting or a chocolate ganache. Either way, it is decadent!!

  14. SO MANY FAVORITES! I found my Mom’s recipe for “perfectly chocolate cake” and it’s accompanying frosting. That was a huge hit. The only change I made was in using coffee to thin the frosting a little. It wasn’t until afterwards that I realized that Mom had copied this “family recipe” from the side of a Hershey’s Cocoa container. It’s still on there!

    Welsh Sponge Cake is a family favorite too. Two layers of butter-laden yellow cake…one layer with vanilla butter cream frosting and one layer with strawberry preserves…the two are then sandwiched together to form the filling of the cake. Then just a dusting of powdered sugar on the top. Not overly sweet…but wonderful.

    The other family favorite is “Wacky Cake”. A very moist chocolate cake that is made without eggs, milk or butter. It was a Depression-era invention, when those items were in short supply.
