I love to cook, but even more so… I love to eat!  I can always remember events and places I attended simply from the food I ate. The holidays are especially memorable, not just because of gathering, but because of eating!!! Typically when we are going to a work-related function, a family member’s house, or a friend’s party we bring along something tasty for everyone to enjoy. That just adds to the magic of this season! But how many times do you go to a party hoping that you made enough to feed everyone?

This Thanksgiving I was planning on making pie and I couldn’t decide if I should make one or two due to the number of guests. To be honest, I didn’t really want have double the work making two pies. And that is when it dawned on me…Company Apple Pie! Company Apple Pie is one of those yummy desserts etched in my memory. My sweet friend is an amazing cook and this is just one of her delicious desserts that she bakes. However this isn’t your typical apple pie, and that is what I love about it. It is perfect for a crowd, and an easy addition to your holiday menu!

Company Apple Pie Re-Size

Company Apple Pie

 

Crust: 2 ¼ Cups of Flour (divided), ¼ cup of water, 1 cup of shortening

In a small bowl mix ¼ cup of flour with one teaspoon of water and set aside.

In a large bowl combine remaining flour and cut in shortening until mixture resembles coarse crumbs. Add water/flour mixture and combine until dough forms a ball. Press dough on to and up the sides of an ungreased 15x10x1 pan (a cookie sheet with an edge).

Filling: 10 apples peeled and thinly sliced, 1 ¼ cup sugar, ¼ cup lemon juice, 2 tsp Cinnamon, 2 TBS flour

Combine and spread over crust.

Topping: 1 ½ cups flour, ¾ cup brown sugar, ¾ cup cold butter cubed

Combine flour and sugar in bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.

Bake at 350 degrees for 1 hour or until apples are tender.

Tips: Turn oven off and let pie sit in oven if the topping is getting too brown so the apples can get tender. For an added touch drizzle caramel on top.

  1. When we are going to our church functions, I KNOW there is always a ton of food, so I just make the same amount that I make for my family, which is generally quite a bit since I have 2 teenagers!!!!!! Can’t wait to try this recipe!

  2. I cook a lot for church functions, and we generally have potlucks. When that is the case, I make enough of each dish that I’m bringing for 16-20 people. For new moms, I like to take a soup, salad, and fresh bread basket to welcome new babies home. Which reminds me that now I get to do this for my brother’s family as he is our pastor, and they just had our brand new nephew yesterday.

  3. Usually I know how many are coming and bake or cook accordingly. When I don’t know, I double my recipe, especially for my most-requested items, and pray that others will totally agree and eat it all up!! Thanks for the giveaway!!

  4. I either bring lasagna or cheese enchilada casserole I will make a salad or garlic bread also. If dessert I always bring more because that is what I like the best. Yum

  5. This was our first time hosting Thanksgiving this year, I was concerned about how the turkey would turn out, but it turned out yummy!.. We ended up having plenty of food , especially homemade mac n cheese, which I made too much of, but it ended up being a pretty.good dinner! :)

  6. Sometimes I will double my recipe for side dishes. I’ll just go by whatever a dessert recipe calls for since there are always plenty of sweets.

  7. Thank you so much for posting your Apple Pie Recipe for a crowd. It sounds delish!!! Most holiday get togethers, each person brings something. I typically double the recipe. If it is a larger function, for example our church small group, I bring a double batch of a main dish and then a side, dessert, or an appetizer. I guess I try to imagine that I am bringing enough food despite what others are bringing for my entire family to eat not be hungry. I always have some left over. Leftovers are fine with me because I would rather have leftovers so I can leave some with party guests, and so dinner guests don’t have to take bite size portions. Thank you again for the recipe! I can’t wait to try it!! :)

  8. I think how much my family would eat and multiply it out for the number of people I need to serve and then round up. Too much it better than not enough.

  9. I usually bring a portion enough to feed my own family. We’ve been known to bring too much but it’s good for leftovers! :)

  10. This might sound silly, but I try to imagine everyone who will attend putting what it is I am bringing on their plate. This helps me determine how much to bring, but I usually err on the side of bringing more rather than less. Thanks so much for the chance to win this generous giveaway!

  11. I usually make assorted chocolate candies for the Christmas party we go to. I am expected to bring chocolate covered cherries, but I try to have a few other varieties in my dish too. I just make as many as I feel up to and it becomes first come, first serve! ;)

  12. I make bite sized mini desserts and I try to estimate the number of items needed by the number of RSVP’s. I normally make too much, but I’m a chocolatier so most guests are happy to take home any leftovers.
    First, I offer the remainder of the chocolate desserts to the hostess and always bring along a cute container to leave the left-overs in….just in case there are any.

    I prefer individual bite-sized desserts to a large pan. I don’t like the look of leaving a half eaten pie or the stress of trying to get my dish returned (gracefully), if I don’t know the hostess very well.

    With long-time friends and family, an apple pie is welcome in any shape or size and there are never left-overs!

  13. Whatever the recipe calls for is what is made! We always seem to have leftovers and if something runs out – that is the dish everyone requests the recipe for!
