I love to cook, but even more so… I love to eat!  I can always remember events and places I attended simply from the food I ate. The holidays are especially memorable, not just because of gathering, but because of eating!!! Typically when we are going to a work-related function, a family member’s house, or a friend’s party we bring along something tasty for everyone to enjoy. That just adds to the magic of this season! But how many times do you go to a party hoping that you made enough to feed everyone?

This Thanksgiving I was planning on making pie and I couldn’t decide if I should make one or two due to the number of guests. To be honest, I didn’t really want have double the work making two pies. And that is when it dawned on me…Company Apple Pie! Company Apple Pie is one of those yummy desserts etched in my memory. My sweet friend is an amazing cook and this is just one of her delicious desserts that she bakes. However this isn’t your typical apple pie, and that is what I love about it. It is perfect for a crowd, and an easy addition to your holiday menu!

Company Apple Pie Re-Size

Company Apple Pie

 

Crust: 2 ¼ Cups of Flour (divided), ¼ cup of water, 1 cup of shortening

In a small bowl mix ¼ cup of flour with one teaspoon of water and set aside.

In a large bowl combine remaining flour and cut in shortening until mixture resembles coarse crumbs. Add water/flour mixture and combine until dough forms a ball. Press dough on to and up the sides of an ungreased 15x10x1 pan (a cookie sheet with an edge).

Filling: 10 apples peeled and thinly sliced, 1 ¼ cup sugar, ¼ cup lemon juice, 2 tsp Cinnamon, 2 TBS flour

Combine and spread over crust.

Topping: 1 ½ cups flour, ¾ cup brown sugar, ¾ cup cold butter cubed

Combine flour and sugar in bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.

Bake at 350 degrees for 1 hour or until apples are tender.

Tips: Turn oven off and let pie sit in oven if the topping is getting too brown so the apples can get tender. For an added touch drizzle caramel on top.

  1. If Iknow how many guests are expected, I would make enough for 1 serving per person. If I don’t know how many guests, I would just bring 2 dishes…

  2. Depends what it is–if it’s easy to double, or if I know our family really enjoys the dish, I will make more. If it’s a potluck where several people are bringing dishes, I try not to worry too much! It usually works out just fine. :)

  3. For the past few years I have been taking a crockpot of mac n cheese. That way I know there is something my kids will eat.

  4. I tend to make more than enough when I take something for a party. That way people can take some home if they want.

  5. My fall go to dish to take to gatherings has been simple… sliced granny smith apples with homemade dip (cream chs, sgr, brwn sgr, vanilla & pecans).

  6. I don’t mind doubling if the original recipe serves less than the number attending. Besides, we love leftovers. You have some to share with others who want to take some home. Double treat.

  7. I try to keep in mind a rough number of how many guests maybe attending plus I make a little extra. A friend of mine who used to work for a catering company said that they would always make enough for the head count plus 10% more, just in case.

  8. Every year we celebrate Christmas dinner at my husband’s sister’s home. I am always assigned to bring my Pineapple Stuffing yet have learned to bring a 1/2 recipe since there are soooo many sides to choose from!

  9. I will usually guess. It really depends on what I’m bringing and where I’m going. For thanksgiving I made a green bean casserole. I just made one pan because it was a veggie. I also brought a dessert and doubled the recipe, which made two pans. The veggie still had leftovers but the dessert was gone in a flash

  10. I usually double the recipe. I usually make desserts…love those sweets! And sometimes I make pineapple casserole! It’s a hit!

  11. I always make something that will serve at least 15 people. There is always enough food to go around so, I’m usually safe with bringing a salad of some sort.

  12. I usually bring one batch or casserole . it just depends on how many are supposed to be there. I have not starved yet! :)

  13. What a beautiful necklace! I love the saying.
    I have 7 children, and now 2 daughters in love plus 2 grands, so for me cooking for a small army is usually what we do. Hubby always reminds me I don’t have to provide all the food for any gathering. But I tend to. And sometimes the teens or a couple of boys usually want to provide food /cook as well. So we usually end up bringing the largest bowls i own (or can find in stores. )
    Fav dishes: scratch pound cake for winter gatherings, (or summer if i have strawberries). summer is pasta salad with veggies (italian dressing marinade), homemade salsa (more like pico de gallo), winter: baked potatoes in a crock pot with toppings. Daughter made scratch green bean casserole for the first time for thanksgiving. That will be our new addition and probably one to take for potlucks.

  14. it depends on the gathering but if I am concerned about not having enough I will just double the recipe. I am making a big bowl of pasta salad for a office party tomorrow, I made extra just in case. If there is leftover then I have lunch for the next day
