Now, from Linda…..

918BvbQYpnLAs long as I can remember I have loved to bake.  It was part of my upbringing and I have so many wonderful memories associated with the sights, smells, and tastes of Christmas. Today I am sharing one of my favorite recipes with you.  This is a wonderful cookie that my sweet mommy made all the time, as I know they were her favorite too! To make them a little fresher I have added some lemon zest to the original recipe. The secret to these and all cookies really, is to under bake them! I hope you enjoy making Mom’s Lemon Ginger Balls and making your own “sweet” memories this Christmas!

Mom McComb’s Lemon Ginger Balls

1 C. sugar

¾ C. Crisco shortening

1 egg

¼ C. Blackstrap molasses

2 C. flour

2 tsp. baking soda

1 ¼ tsp. cinnamon

1 ¼ tsp ginger

1 tsp. of lemon zest

Pinch of salt

Cream the sugar and shortening together. Add egg, molasses, and lemon zest in sugar and shortening mixture, mix well. Whisk flour, salt, soda, spices together. Add to other ingredients. Mix together well, but do not overbeat. Roll dough into small balls and roll in sugar, raw or granulated. Bake at 350 degree preheated oven for 8 11 minutes.

  1. Baking and decorating Christmas cookies with my grandma. Now I try to bake with my kids, although my treats are never quite as good as grandma’s!

  2. Baking povitisa! For our family and to share with others, such as school teacher, sunday school and youth workers, coaches, friends, etc. It’s an all day affair that we cherish!

  3. We love gooey butter cookies that our family from out of state makes and sends to us every Christmas. We look forward to getting them every year!!

  4. This time of year, we miss my grandma’s bourbon balls. The grandkids jokingly called them shot balls. My grandma was the center of our world.

  5. I will definitely be trying this recipe. My husband loves anything that is lemon. My favorite “sweet” memory of pie is the Chocolate Pudding Pie we had for Thanksgiving and Christmas. It is now a tradition for my family.

  6. I love Cheesecake. Not plain, but any flavor. Especially turtle cheesecake and cherry cheesecake. My mom would always make a cherry cheesecake for one of the desserts on Christmas. And it has carried on. I still make one since my mother no longer fixes any Christmas dinners or desserts anymore. And my birthday is in February and now my inlaws (knowing how much I hate cake) buy me a cheesecake sampler instead of a birthday cake and I always get a peice of turtle. Yummy!

  7. I would take a pie over cake ANY day. During Christmas, my Grandmother always made two pecan pies, two chocolate pies, a coconut pie and a banana cream pie. Every one of her children had to have their favorite pie made especially for them from their mother. :) Then of course my Grandaddy had to have his favorite too. It was always a blessing to be in the kitchen learning how to bake those special pies with Grandmother. She has been gone since 2010, but there are so many wonderful memories and recipes that live on with us today. Thank you for letting me bring back all of those baking memories. Yum!

    Blessings,
    KK

  8. My “sweet” memories of pie is when my Grandmother made each one of our favorite pie for Christmas. My Grandmother was an excellent baker and really didn’t have a lot of money at Christmas, so she gave from her heart and talent. When we talk about Christmas we ALL remember that Christmas and how special it was! By the way my favorite pie…pecan!

  9. I LOVE fruit pies- especially blackberry, but I have sweet memories of a pie that my grandmother (now 96 years old and in a care facility) made often was a brown sugar.

  10. That cookbook looks amazing! My husband would love the Brown Butter Coconut Chese Pie. I am going to have to get this one!

  11. I love pies at this time of year. My favorites are pumpkin and apple. Throw in some chocolate pixies and I am all set for the year!

  12. My mom passed away in January and she loved to make pies and was known for them. She gave them to everyone from the Pastor to he mail lady. When she was stressed, she would just make pie after pie!

  13. Making pies with grandma, with cream cheese crust..

I tried making a pumpkin cream cheese bread from scratch once. It was kind of enjoyable.

  14. My favorite holiday treat was my grandmothers apple cake…it was so yummy. She always told me you can never make it with a mixer…you have to use your God given mixer (your hands)….oh how I loved to make it with her.

    Merry CHRISTmas!
