A kitchen-tested recipe for Scottish Shortbread

FOOD 05 Scottish Shortbread

Shortbread served with tea is a Scottish tradition worth embracing. Why not brew a pot of Earl Grey or Scottish Breakfast tea and serve it piping hot (I love mine with milk and sugar). While you are enjoying your first cup, it’s time to do a bit of baking.

Ingredients:
1/2 cup confectioners’ sugar
1/2 cup cornstarch
1 cup all-purpose flour
3/4 cup butter, softened
1 tablespoon granulated sugar

Instructions:
Sift confectioners’ sugar, cornstarch, and flour together in a bowl. Add softened butter, using your hands to knead the mixture into dough. Wrap dough in plastic wrap, and refrigerate for no longer than 30 minutes.

Press cold dough into the bottom of a greased 8 x 8 pan (round or square; glass is best).

Bake at 325 for 30 minutes or until the edges are very lightly browned.

Sprinkle granulated sugar across the top. Cool completely, then cut into 8 servings.

P.S.  Want to bake a bigger batch? Double the recipe and use a glass oblong baking dish. Want a more festive look? Used colored granulated sugar for the final dusting.

  1. Love shortbread! Thank you, Liz! I am going to have to read your books. You can’t beat a Biblical teaching with humor! :) Growing up, and still today, we have two types of chocolate fudge, date loaf, whipping cream pound cake, pecan pie, chocolate pie and coconut pie. Yummy sugar overload!

  2. We have always made shortbread cookies. My husbands grandparents were from Scotland so this is an important tradition.
    I have been reading both of Liz’s Christmas books I love them.

  3. My mom always made banana pudding for each holiday because that was my favorite as a kid. Now that she is gone, my daughters keep up the tradition. Love it!

  5. We love to make and decorate cookies on Christmas Eve. There are other foods my kids love that we typically only do at the Holidays because they are so indulgent. They always request Oreo balls and peanut butter balls this time of year.

  6. Is anyone else hungry? Our school always did this big Gingerbread House day where ALL the kids made gingerbread houses out of graham crackers, icing and candy. It’s an art project led by the art teacher. Well, we’ve moved to a different town…so we’ll be continuing that fun at home.

  9. I’m terrible in the kitchen! I had visions of making sugar cookies for years and gave up….I just enjoy my sis-in-laws ;). I always make puppy chow and choc covered pretzels….and corn casserole and cheesy potatoes! :) thx for sharing! I’m intrigued by your book….I may just have to go get it!

  10. I enjoyed reading about making shortbread cookies I thought they would be much more difficult. I already live tea so I will have to make some amd have tea at the same time. Every Christmas for our Christmas eve gathering we love to make pretzel salad. Everyone enjoys it from young to mature! With a red hello and coolwhip it looks like christmas. Since I am NOT from Scotland I will say Merry Christmas and so glad Jesus was born, to walk on this earth and then die and rise again so I would have the opportunity to live in heaven for eternity! !

  11. I am definitely going to make this shortbread with my granddaughters, I make sweet potato casserole for my co workers. It started out as my contribution to our Christmas luncheon and has gained momentum over the years. Merry Christmas and God bless.

  12. I enjoy all of the different candies, homemade and store bought, that are available this time of year. (Fudge, chocolate covered cherries, old-fashioned southern divinity with pecans, peanut brittle, and peanut butter “buckeyes”)

  13. We love to make Rosettes every Christmas season. For years when our kids were young they helped their grandparents make them, and what a special time it was!

  14. My favorite Christmas food tradition is cookies. I make raspberry thumbprint cookies and chocolate icebox cookies. My husband makes his mom’s sugar cookies sprinkled with red or green sugar. Delicious!
