Spinach Feta Egg White Wrap
If you have ever been to Starbucks in the morning, you will notice some of them have breakfast options, one of which is a spinach feta wrap! It is one of the best options I have found for a healthy on-the-go breakfast! However, if you do have five minutes and a handful of ingredients, you can make your own for half the price and with all fresh ingredients! This wrap can also be served for lunch, dinner, or even a high protein snack!
Ingredients:
6 | Egg whites (or 4 egg whites + 1 egg) |
2 cups | Fresh baby spinach (or 1 cup frozen, thawed and squeezed dry) |
Pinch | Salt + Pepper (or to taste) |
1/2 cup (2 oz) | Feta cheese, crumbled (or cheese of choice) |
2 | Whole grain tortillas |
Method:
- Spray a large nonstick skillet with cooking spray. Over medium heat, cook the egg whites in the pan until almost cooked through. Add the spinach and feta cheese in the last minute of cooking, along with salt and pepper to taste. Turn off heat.
- Warm tortillas in the microwave for 30 seconds, and divide egg mixture between the two wraps. If desired, place the wraps back into the pan and toast the outside of the wrap over medium low heat for about 1 minute on each side, or until toasted. (Or you could toast it up in a panini grill and make an egg white quesadilla!) Enjoy!
