Granny Brewer’s Potato Salad

My daughter-in-law Macey’s Granny Brewer is an amazing cook. Her potato salad is an all time favorite dish her family loves.

Granny Brewer’s Potato Salad

Creamy and delicious with a hint of a cajun kick, this dish is perfect for your next picnic!

Ingredients

  • 6  medium to large Yukon gold potatoes diced into ½ inch cubes
  • 5 hard boiled eggs chopped fine
  • 3 ounces bread and butter pickles chopped fine
  • 1 cup mayonnaise
  • 1 tsp spicy brown mustard
  • 1/2 tsp dried dill
  • salt to taste
  • pepper to taste
  • 1/2 tsp cajun seasoning optional

Instructions

  • Put potatoes in a large pot, fill with water covering your potatoes, and bring to a boil.
  • Allow to boil for 10-15 minutes until fork tender. Chop your eggs and bread and butter pickles.
  • Add your potatoes, eggs, pickles, mayonnaise, and mustard to a large serving bowl, mixing well.
  • Add your dill, salt, pepper, and cajun seasoning (if desired), stirring until combined.
