Maple Sweet Potato Mash

This fluffy and sweet side dish is something I created just before our youngest son left the nest to move to Australia. Unfortunately, the 2020 Covid pandemic hit and he had to move back to the states just a few months later. Eating some of mama’s maple sweet potato mash made the transition a little easier.

Maple Sweet Potato Mash

Serve this with poultry or ham for a fabulous comfort food side dish.

Ingredients

  • 6 large sweet potatoes
  • 6 tablespoons salted butter
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ½ cup real maple syrup (do not use pancake syrup)
  • ¼ cup pecans chopped
  • 3 tablespoons brown sugar

Instructions

  • Preheat the oven to 375 degrees. Grease a casserole dish and set aside.
  • Prick potatoes and wrap in foil. Bake for 1 hour until soft to the touch. (Or, prick and bake in the microwave on the potato setting until potatoes are cooked through.)
    Let potatoes cool until you can touch them without burning your hands.
  • Cut potatoes open, scoop out flesh, and place in the greased casserole dish.
  • Add butter, vanilla, salt, and pumpkin pie spice to sweet potatoes and mash well.
  • Add maple syrup and stir.
  • Pop the dish into the oven for 15 minutes, uncovered.
  • Remove from oven and set the oven to broil.
  • Top the potato mixture with pecans and sprinkle with brown sugar.
  • Broil for 3-5 minutes, watching closely so that it browns but does not burn.
