Double-Dutch Mocha Brownies

Who doesn’t love the winning combination of chocolate and coffee? These mocha brownies will have you skipping for joy! (Get it? Double Dutch=Skipping?)

Double-Dutch Mocha Brownies

These brownies are chewy and full of of bursts of semi-sweet chocolate in every bite!

Ingredients

  • 2 tablespoons hot tap water
  • 1 ½ tablespoons instant coffee granules
  • ½ cup butter, melted
  • 2 large eggs, room temperature
  • 1 cup + 2 tablespoons granulated sugar
  • 1 ½ teaspoons vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup Dutch-processed cocoa powder
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Confectioner’s sugar for dusting

Instructions

  • Preheat oven to 350℉
  • Grease and flour an 8-inch square baking pan.
  • In a large mixing bowl, add the hot water and instant coffee.
  • To the same bowl, add butter, eggs, granulated sugar, and vanilla.
  • In a medium bowl, combine the flour, powdered sugar, cocoa powder, and salt.
  • Add the flour mixture to the wet mixture until just combined.
  • Gently fold in the chocolate chips.
  • Pour the batter into the prepared pan.
  • Bake for 18-22 minutes or until a toothpick inserted into the middle of the brownies comes out covered with some clinging crumbs, but not moist batter.
  • Cool, dust with powdered sugar, and cut into squares.
  • Store leftovers (if any!) in a covered container.
