We are starting to wind down in our 12th annual 12 Days of Christmas Giveaways. It is now day eleven. If you’re just joining in, be sure to start at Day 1 here.

The giveaway guest we are hanging out with today is my friend and ministry partner, Nicki Koziarz. She is an author and speaker who resides with her family on a fixer upper farm in North Carolina. She is also one of my most encouraging and praying friends. We keep up with each other on the Voxer App and she helps me to keep going in ministry at those times I want to quit. 

But before we peek at Nicki’s prize, here is a recipe for simple cinnamon rolls to bake for Jesus’ birthday! Stick a candle in one and sing happy birthday to Jesus before enjoying the rolls while opening gifts on Christmas morning. (And stay tuned for another breakfast idea to go with it tomorrow!)

Day 11: Simple Cinnamon Rolls

Ingredients:

2 1/2 t. yeast (one package)
1/4 c. warm water (110–115 degrees)
1 c. whole milk
1/2 c. butter (or butter-flavored shortening)
1/3 c. sugar
1 t. salt
1 large egg, beaten
4 c. (or more) bread flour
5 T. melted butter
1/3 c. brown sugar
2 t. ground cinnamon

Icing:

2 c. powdered sugar
2 T. butter, room temperature
¾ t. vanilla or orange extract
milk or cream, as needed

In a small bowl, dissolve yeast in warm water. In a large saucepan, heat milk over high heat until it just begins to boil. Remove from heat. Add butter (or shortening) sugar, and salt. Let cool until still slightly warm. Add yeast mixture and egg, and mix well. Add four cups or more bread flour, mixing well, until you have a soft but firm dough. Turn out onto a well-floured counter. Knead for 5 minutes. Place in a well-oiled bowl, cover with a towel, and let rise until doubled, about 1 1/2 hours.

Turn onto a lightly floured surface. Roll into a rectangle about 10 x 14 inches. Brush with melted butter. Sprinkle on mixed brown sugar and cinnamon. Roll up, beginning with the short side, and place seam down on the counter. Cut into nine rolls. Place them in a greased 8-inch round pan with one in the center and the other eight spaced evenly around. Cover loosely with plastic wrap that has been sprayed with cooking spray to keep from sticking. Let rise 45 minutes to 1 hour.

Bake at 350 degrees for 18–23 minutes, or slightly longer, being careful to watch so they don’t get too browned. Do NOT overbake. Cool. Blend icing ingredients together until smooth and spread over rolls. When frosting is set, wrap rolls in foil. Happy Birthday Jesus!

  1. Usually we will do a big breakfast of eggs, sausage, hash browns, cinnamon rolls, and bacon. Some years the buffet is larger while other years we have kept it simple with just a few items to hold us over until family comes over and we eat a large traditional Christmas dinner.

  2. We don’t typically eat anything for breakfast. Christmas morning, we’re cooking all the food and then once the rest of the family is here, we eat around noon or 1. But I do often snack on the remaining buckeyes (chocolate peanut butter balls).

  3. Oh we have a yummy breakfast on Christmas morning! Homemade cinnamon rolls, chorizo, Filipino eggs, fried rice, and fruit salad. I can’t wait!!

  4. For Christmas morning breakfast, we have made it a tradition to eat baked cinnamon and orange rolls. We also make eggs benedict for those preferring something more savory than sweet.

  5. We have 6 kids still at home and all of our other kids and grandkids live out of state. Since we don’t usually go anywhere on Christmas morning, we have a late breakfast of huge cinnamon rolls, crepes with fresh fruit and cream, bacon, sausage, eggs, hash browns and either grits or oatmeal (sometimes both). It’s our one big meal of the day. We usually have seafood gumbo or something like it for dinner in the evening. Lunch is light if we eat lunch at all :)

  6. I sometimes make biscuits and chocolate gravy for Christmas morning breakfast. My uncle made it for us when we were kids. If we are having an early Christmas breakfast, i might scramble some eggs or just wait to eat.

  7. We have cinnamon buns for breakfast! I prepare cinnamon buns on the 24 in the afternoon but don’t bake them. I cover them and put them in the fridge overnight. Christmas morning I pull the tray of buns out, uncover them, and let them sit on the counter while the oven heats up an then bake. Sometimes they take a couple extra minutes because they are cold., and that’s okay because we are opening stockings while we wait.

  8. My family always make pancakes, sausage, scrambled eggs, bacon, and toast for our Christmas breakfast with a choice of orange juice, coffee, or hot cocoa. We always light a candle in a stack of pancakes and sing Jesus Christ “Happy Birthday”.

  9. What do we eat for breakfast? We have made monkey bread and an egg bake in the past. My favorite would likely be egg wraps my hubby makes! I am hungry just thinking about it!!! ?

  10. I have made cinnamon rolls in the past. Maybe I should revisit that idea. I have made breakfast casseroles. Oh sausage balls. It all depends on the schedule which chnages yearly.
