Crock Pot Hawaiian Chicken

Serve over rice and sprinkle with sliced almonds for an easy but delicious meal!

Crock Pot Hawaiian Chicken

Ingredients

  • 3 pounds boneless skinless chicken breast halves
  • cup cornstarch
  • ¼ cup brown sugar
  • cup soy sauce
  • cup fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground ginger
  • ¼ teaspoon crushed red pepper
  • 16- ounce can pineapple slices, drained
  • 15- ounce can mandarin oranges, drained
  • One green pepper, chunked into ½ inch size pieces
  • Cooked rice and sliced almonds for serving

Instructions

  • Place chicken in the Crock Pot.
  • Mix together the cornstarch, brown sugar, soy sauce, lemon juice, and all the spices. Fold in the drained fruit.
  • Pour the mixture over the chicken, cover and cook on high for three hours.
  • Add green pepper and continue to cook on high for two more hours.
  • To serve, spoon over cooked rice and top with sliced almonds.
